Biki jackson

Biki was born at Eglin Air Force Base. Soon after his arrival, his family relocated to Italy until he was seven, when they got stationed in Lubbock, Texas.

Biki’s culinary career began at a multinational pancake house as a dishwasher. By the end of his eight-year tenure, Biki was head cook.

Seeking an opportunity that would allow Biki the freedom to spend more time with his family, he moved on and tried his hand at stocking retail stores, construction work, and even partnered with his brother on an auto-detailer venture and “whatever else” to create the family-life he dreamed about. As fate would have it, the economy took a dip, and Biki found his way to an American casual dining restaurant specializing in Italian-American cuisine that closed for every major holiday. Biki resumed the position of grill and appetizer cook and the rest was history.

Biki loves the fast pace and hustle and bustle of restaurant life so much, prior to becoming Sous Chef with North Beach Tortilla Company, he often had his hands in multiple restaurant kitchens at one time. The long days were worth the quality time he got to spend with his family.

Outside the restaurant you can absolutely find Biki with his immediate and extended family. Biki also enjoys the rare moments connecting with his brother — late-night gaming online.
